Making pralines is an art form that can be affected by so many things: temperature, ingredients... even the weather. Our job is to control as many of those conditions as we can to ensure the highest quality candy that our clients have come to expect and love... each and every time! Here is some helpful information we hope will answer some of the questions you might have!
Warming - while some people are used to and enjoy their pralines right out of its packaging, warming them is a true delight! They shouldn't be warmed long... just a few seconds in the microwave is all you need. We recommend no more than 10-12 seconds, depending on the size of the piece and flavor, as well as the temperature you prefer. Please be mindful that warming time will also depend on the wattage of your microwave and altitude; warming too long will change the property of your praline and may cause melting, recrystallization or even overcooking making them too hard. If you'd like to try it, start with 7-10 seconds then increase as you desire.
Weather - if it's humid outside (or even indoors) or rainy, pralines may take longer to set. This may affect handling/shipping time as we want to package and ship only after pralines have had time to fully set.
Size - all orders are created with the same ratio of ingredients - Grandma's recipe has been perfected over the years and is perfect... it will NEVER change!
Depending on cutting technique, thickness, etc., the pieces in larger orders may vary. For example, half orders contain at least 12 pieces, but could have more... same for full orders, which will always have at least 20 pieces. No matter how many pieces, based on weight and ratio of ingredients, your order will always contain the entire yield of the batch!
Smaller orders (3pc and 6pc) may have a variety of sizes and thickness. This is due to spreadability, but as with larger orders, based on weight, each gift bag or box will always be measured to ensure our clients never receive less than expected.
Color - again, weather plays a huge part in the outcome of pralines. That said, our aim is to go for a creamy to golden caramel color for all pralines (some pralines will take on a lighter or darker hue based on ingredients used to achieve flavor profile). Our pralines are cooked to a specified temperature every time - never more or less, as this affects a number of things, including taste! Our clients will never experience undercooked (gummy, pasty) or overcooked (rock hard or burned) pralines!
If you have any other questions or concerns, please feel free to reach out to us! We love hearing from our clients; you are the reason we do what we do!
Reviews
Hello, I ordered Pralines for the first time in my life and I ordered the peanut butter “extra pecans” and white chocolate ones. They are absolutely amazing. I ate mine straight out the package room temp and it still melted in my mouth. Very fast, responsive, professional and blessed services. I loved everything about my purchase. I also got a complimentary flavor with pecans and caramel in it and it was to die for.
